Genetics is important when talking about intolerances
Not everyone is lactose intolerant and not everyone is lactose intolerant to the same degree. This is largely due to individual genes as well as other factors such as geographical distribution. Although the majority of the world's population tends to be lactase-deficient, the enzyme that helps metabolise lactose, there are exceptions such as people living in northern and central European countries like Denmark and Sweden. The gene that makes lactase can be altered. When both copies of the lactase gene are unaltered, people are lactose tolerant. If either of these copies is altered, then there is intolerance in whole or in part.
